EASY baked omelet

*for my family I'll have to at least double this, everyone devoured and enjoyed!

Ingredients

  • 6 eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • Place eggs and milk in a blender. Add the flour, salt and pepper; cover and process until smooth. Pour into a greased 13-in. x 9-in. baking pan. Bake at 375° for 20-25 minutes or until eggs are set.
  • Sprinkle with cheese. Roll up omelet in pan, starting with a short side. Place with seam side down on a serving platter. Cut into 3/4-in. slices. Yield: 6 servings.
*Can add sprinkled ham, mushrooms, other omelet stuff AFTER rolling and serving. It doesn't roll so great with extra toppings.

Nutritional Analysis:2 slices equals 204 calories, 12 g fat (6 g saturated fat), 238 mg cholesterol, 393 mg sodium, 11 g

carbohydrate, trace fiber, 13 g protein.

The Mistake that Worked

I tried to make German Cheese Blintzes this morning for breakfast, and they just wouldn't work for me. So, I did what I normally do when I don't want to waste ingredients... I added more ingredients and tried something different. This ended up being a baked oatmeal dish, and it turned out great! Jonas said, "This mistake turned out to be one of our favorite breakfasts!" Time will tell if that is really true.

1 container cottage cheese (I used fat free)
3 eggs
6 T flour (I used wheat)
1 T sugar
1 pinch salt
2 pinches baking soda
3 drops of vinegar
2 cups of oatmeal (regular, not quick)

Mix together, spray 9X13 pan, spread out, bake at 350 for 25-30 minutes.
Sprinkle brown sugar on top. Yum.

Protein packed pancakes

And yum.

2 eggs
1/2 cup cottage cheese
1/2 cup oats
splash of vanilla

(Clearly, I quadruple the recipe...)

Blend (in blender) and put about 1/8 to 1/4 cup on your greased pan as you normally make pancakes. These are delicious, light, and healthy! Yay!

Easy, delicious spinach quiche

Hmm... another spinach recipe. This is really good, and you could probably substitute a different vegetable if you wanted... Zucchini comes to mind!

1 10 ounce bag of frozen spinach
1/2 an onion chopped up
5 eggs
12 ounces of muenster or favorite cheese
Salt and pepper

Mix together with a fork. Dump in greased 9 inch pie pan. Bake at 350 for 30 minutes. Let sit for 10 minutes.

We served this with broccoli/apple/raisin/yogurt slaw and triple berry muffins.

I had several members of the family say this was the best quiche they ever had and please add this to the rotation of meals. Yippee!

Buttermilk Pancakes

These pancakes are a favorite at our house. Hope you like them too. My kids call them IHOP pancakes... Isom House of Pancakes, probably because I usually have some strawberries and whip cream in addition to syrup to top them with.

Ingredients:
1 1/3 cups buttermilk
1 egg, beaten
1 1/2 cups flour
2 T sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/4 cup butter, melted

Combine buttermilk and egg. Add dry ingredients and mix until blended. Add butter. Pour onto hot griddle. Flip when bubble start to break and edges appear dry.

*Notes*
I usually have to double this recipe for our family. Most of the time I triple it and then freeze the leftover pancakes.
I have recently started sifting the dry ingredients before I add them to the buttermilk/egg mixture. I feel like I have noticed that the pancakes are lighter and fluffier, but it could be my imagination :)

French Toast Casserole

I found this online... It is so yummy and easy and you can even make it the night before a busy morning!

All Jonas had to do this morning was pop it in the oven for 40 minutes and then the kids enjoyed a delicious breakfast!


French Toast Casserole Recipe Ingredient List

1 stick (1/2 cup) unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
8- to 9-inch round loaf country-style bread
5 large eggs
1 1/2 cups half-and-half
1 teaspoon vanilla
1 shake of cinnamon
1/4 teaspoon salt
Powder Sugar to taste!

In a small heavy saucepan melt butter with brown sugar and corn syrup over moderate heat, stirring, until smooth and pour into a 13- by 9- by 2-inch baking dish.
Cut six 1-inch thick slices from center portion of bread, reserving ends for another use, and trim crusts.
Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.

In a bowl whisk together eggs, half-and-half, vanilla, cinnamon, and salt until combined well and pour evenly over bread. Chill bread mixture, covered, at least 8 hours and up to 1 day.

Preheat oven to 350° F. and bring bread to room temperature.

Bake bread mixture, uncovered, in middle of oven until puffed and edges are pale golden, 35 to 40 minutes.

Serve hot French Toast Casserole immediately.
(or freeze in an air tight container! Can last for one month in freezer!)

Broccoli Ham Quiche

This may be more of a breakfast dish, but I made it for dinner tonight. We had ham for Sunday dinner and I had some left overs I needed to use. Anyway, it was very well received by everyone. That's right, it pleased 7 out of 7 people. The kids didn't even know there was potatoes in it. I guess it's a keeper. Next time I make it I will have to double it and cook it in a 9x13 inch pan. It is a microwave recipe too, and though I prefer to cook in the oven...sometimes in a pinch it's nice to have a quick microwave recipe. Hope you like it!

2 cups frozen shredded hash brown potatoes
1 cup (4 oz.) shredded cheddar cheese
1 cup diced fully cooked ham
1/2 cup chopped fresh broccoli
4 eggs
1/2 cup milk
1 teas. dried minced onion (I didn't add this because I didn't have it on hand, but I'm sure it would be good in there)
1/2 teas. garlic powder
1/2 teas. salt
1/2 teas. pepper (I only added 1/4 teas. since we are not big pepper fans.)

1. Place hash browns in a greased 9 inch microwave-safe pie plate. Microwave, uncovered, on high for 4 minutes or until thawed. Press onto the bottom and halfway up the sides of the plate. Microwave, uncovered, on high for 3 minutes. Sprinkle with cheese, ham and broccoli.
2. In a large bowl, beat the eggs, milk and seasonings; pour over ham mixture. Cover with waxed paper. Microwave at 70% power for 10-12 minutes, or until set. Let stand for 5 minutes before cutting. Makes 4-6 servings.

Baked Amish Oatmeal

Amish Baked Oatmeal

1 1/2 cups quick-cooking oats
1/2 cup sugar
1/2 cup milk
1/4 cup butter melted
1 egg
1 tsp. baking powder
3/4 tsp. salt
1 tsp. vanilla

Toppings:

Warm milk
fresh fruit and/or brown sugar, optional
yogurt

Combine the first eight ingredients; mix well. Spread evenly in a greased 13 in. x 9 in. x 2
in. baking pan. Bake at 350 for 25-30 minutes or until edges are golden brown.
Immediately spoon into bowl and add various toppings.


This is yummy! I put it in a preheated cast iron pan which made it crispier. I like the leftovers on top of my yogurt the next day.

German Pancake

This can be halfed easily. Use cast iron, it is the best! It is fun to see how the pancake forms. Good for breakfast or dessert. The girls LOVE IT!

Makes 2 large pancakes, 4-6 servings each

4 eggs
1 cup milk
1 cup flour
1 teaspoon sugar
3/4 teaspoon salt
1/4 cup (1/2 stick) unsalted butter

Topping suggestions:
Lemon wedges
Powdered sugar
Berries
Maple or Fruit syrup

Preheat oven to 425°F with the cast iron in the oven.

Whisk eggs, milk, flour, sugar and salt in a large bowl. Let stand for 30 minutes at room temperature.

Remove cast iron from the oven and divide butter between two 9 or 10-inch cast iron skillets (I've done 8" and 12"). Swirl butter to coat sides. Divide batter between pans. Bake on lowest rack until golden brown, set on center rack and allow to bake until sides rise high above the sides of the pans, 12-15 minutes.

Cut Big Pancake into wedges and serve with dusting of sugar, berries and a squirt of lemon juice, or just some maple syrup.

One of my favorite recipes.

One of my absolute favorite recipes is so simple and easy.

It involves the following ingredients.

Phone.
Money.
About a 1/2 hour of waiting.

Call Papa Johns and get a Hawaiin pizza!! :)

Just kidding (sort of). Here is really one of my favorite recipes:

Monkey Bread

Heat to warm 1 cube butter and ¾ milk.

Mix 3 eggs, ¾ C sugar and 1 tsp salt.

Add to milk and butter.

Dissolve 1pkg dry yeast in ¼ C lukewarm water and 1tsp sugar.

Add to milk, butter, eggs etc.

Add 2½ C flour and mix well.

Add another 2½ C flour to make soft dough. Knead well. Place in buttered bowl and cover. Let rise 1 hour. Punch down and shape as follows: Roll out the dough to about ¾ inch thickness. Cut in strips about 1 inch width. Cut in pieces about 2 inches long. Dunk in melted butter and then in cinnamon sugar mixture. Place in tube pan and let rise another 45 minutes. Bake at 350. Cool for 10 minutes and invert.

Served best with hot chocolate and it is a very good seasonal gift during the holidays. You can only eat it with your fingers - no slicing the monkey bread allowed!!
