Oatmeal Cake

Yummy Oatmeal Cake

Pour 1 1/4 cup boiling water over 1 cup quick oatmeal. Let stand for 20 minutes.
Cream 1/2 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
Add oats
1 1/3 cup flour
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
Bake in a greased 9X13 pan at 350 for 35 minutes
While cake is warm, spread and broil:
6 T melted butter or margarine
1/2 cup brown sugar
1/4 cup milk
1/2 tsp. vanilla
1 cup coconut (can be skipped or sub cookie crumbs)
1 cup nuts

Today, my kids didn't eat all the oatmeal, and so I subbed the leftovers in the pot for the beginning step. Way better than storing it in the fridge to be dumped out later. Who eats leftover oatmeal?
